Ingredients
  

Cupcake Batter

  • 1.5 cups all-purpose flour sifted
  • 1.5 tsp baking powder
  • 0.25 tsp salt
  • 1 tsp ground cinnamon
  • 0.5 tsp ground nutmeg
  • 0.5 cup unsalted butter room temperature
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 0.5 cup milk room temperature

Apple Filling

  • 2 cups diced apples Granny Smith or Honeycrisp
  • 0.33 cup granulated sugar
  • 0.5 tsp ground cinnamon
  • 1 tbsp lemon juice
  • 2 tbsp butter

Cinnamon Buttercream Frosting

  • 0.5 cup unsalted butter room temperature
  • 2 cups powdered sugar
  • 0.5 tsp ground cinnamon
  • 1 tsp vanilla extract
  • 2 tbsp heavy cream

Instructions
 

  • Peel, core, and dice the apples. In a saucepan over medium heat, melt butter and combine with apples, granulated sugar, ground cinnamon, and lemon juice. Cook until the apples soften and the mixture thickens. Let the apple filling cool completely.
  • In a mixing bowl, whisk together all-purpose flour, baking powder, salt, ground cinnamon, and ground nutmeg. In another bowl, cream unsalted butter and granulated sugar until light and fluffy, then add eggs and vanilla extract. Alternately mix in the dry ingredients and milk until just combined.
  • Preheat the oven to 350°F. Line a muffin tin with cupcake liners. Fill each liner halfway with the cupcake batter, add a spoonful of cooled apple filling, then top with more batter until two thirds full. Bake for 18 to 20 minutes or until a toothpick inserted in the center comes out clean. Let the cupcakes cool completely.
  • In a large mixing bowl, beat unsalted butter until creamy. Gradually add powdered sugar and ground cinnamon, then mix in vanilla extract and heavy cream until the frosting is smooth and fluffy.
  • Once the cupcakes are completely cool, frost them with the cinnamon buttercream. Optionally, drizzle with caramel sauce and garnish with a thin apple slice.
