Ingredients
  

Dry Ingredients

  • 3 cups old-fashioned rolled oats
  • 1 cup mixed nuts chopped almonds, pecans, and walnuts
  • ½ cup mixed seeds such as sunflower and pumpkin seeds

Liquid Ingredients

  • cup honey
  • ¼ cup coconut oil
  • 1 tsp vanilla extract

Seasonings

  • ½ tsp salt
  • ½ tsp cinnamon

Optional Mix-Ins

  • ½ cup dried cranberries
  • cup dark chocolate chips

Instructions
 

  • In a large mixing bowl, combine the rolled oats, chopped nuts, and mixed seeds. Stir until evenly distributed.
  • In a small saucepan, gently warm the honey and coconut oil until smooth. Stir in the vanilla extract.
  • Pour the warm liquid mixture over the dry ingredients. Stir with a spatula until everything is well coated.
  • Spread the granola mixture evenly onto a lined baking sheet. Bake at 325°F (160°C) for 20-25 minutes until light golden brown, stirring halfway through.
  • Remove from the oven and let the granola cool completely on the baking sheet. Once cooled, mix in the dried cranberries and dark chocolate chips if desired.
