12ozpastayour favorite type such as penne or fusilli
Sauce Ingredients
1cupcottage cheesefull fat for creamier texture; low fat also works
2clovesfresh garlicminced
¼cupgrated Parmesan cheese
¼cupmilkor reserved pasta water to adjust consistency
1tbspolive oil
½tspsalt
¼tspblack pepper
Instructions
Bring a large pot of salted water to a boil. Add 12 oz of pasta and cook according to package instructions until al dente. Reserve 1/2 cup of pasta water before draining.
In a blender, combine 1 cup of cottage cheese, 1/4 cup of milk, and 1 tbsp of olive oil. Blend until smooth and creamy.
Add 1/4 cup of grated Parmesan cheese, 2 minced garlic cloves, 1/2 tsp of salt, and 1/4 tsp of black pepper to the blender. Blend again until well combined.
In a large skillet over low heat, warm the blended sauce for 1 to 2 minutes. Add the cooked pasta and toss to coat evenly, using reserved pasta water if needed to adjust consistency.
Serve the pasta immediately, garnished with extra grated Parmesan and fresh basil if desired.
Notes
You can customize this recipe with additional herbs or proteins. If the sauce thickens, add a splash of reserved pasta water or milk to restore its creaminess.
