Ingredients
  

Pasta

  • 12 oz pasta your favorite type such as penne or fusilli

Sauce Ingredients

  • 1 cup cottage cheese full fat for creamier texture; low fat also works
  • 2 cloves fresh garlic minced
  • ¼ cup grated Parmesan cheese
  • ¼ cup milk or reserved pasta water to adjust consistency
  • 1 tbsp olive oil
  • ½ tsp salt
  • ¼ tsp black pepper

Instructions
 

  • Bring a large pot of salted water to a boil. Add 12 oz of pasta and cook according to package instructions until al dente. Reserve 1/2 cup of pasta water before draining.
  • In a blender, combine 1 cup of cottage cheese, 1/4 cup of milk, and 1 tbsp of olive oil. Blend until smooth and creamy.
  • Add 1/4 cup of grated Parmesan cheese, 2 minced garlic cloves, 1/2 tsp of salt, and 1/4 tsp of black pepper to the blender. Blend again until well combined.
  • In a large skillet over low heat, warm the blended sauce for 1 to 2 minutes. Add the cooked pasta and toss to coat evenly, using reserved pasta water if needed to adjust consistency.
  • Serve the pasta immediately, garnished with extra grated Parmesan and fresh basil if desired.

Notes

You can customize this recipe with additional herbs or proteins. If the sauce thickens, add a splash of reserved pasta water or milk to restore its creaminess.
