  • 2 large chicken breasts boneless and skinless, pounded thin
  • 2 large eggs beaten
  • ½ cup all-purpose flour
  • 1 cup panko breadcrumbs
  • ½ cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 1 cup marinara sauce homemade or store-bought
  • 4 rolls sub rolls or ciabatta
  • ¼ cup olive oil for frying and brushing
  • a handful fresh basil for garnish

Instructions
 

  • Slice the chicken breasts in half and pound them to an even thickness. Season with salt and pepper.
  • Prepare three bowls: one with flour, one with beaten eggs, and one with a mix of panko breadcrumbs and grated Parmesan cheese.
  • Dredge the chicken in flour, dip in eggs, and coat evenly with the breadcrumb mixture.
  • Heat olive oil in a skillet and fry the chicken for 3 to 4 minutes per side until golden and crispy.
  • Toast the rolls lightly, spread marinara sauce, place the fried chicken on top, add shredded mozzarella and fresh basil.
  • Place the assembled sandwich under the broiler for 2 to 3 minutes until the cheese melts.
